Tiger Eye Bean

The golden brown Tiger's Eye beans are named after the the swirl of dark maroon color on them said to resemble the eye of a tiger.
This is a true bush bean whose compact plants are heavily loaded starting fairly early in the season. I found them to be a good shelling bean at 60 days, but saved most to dry, which took about 80 days. When cooking, the thin skins nearly disappear and the creamy texture and rich flavor is a delight.
